Green Tomato Relish Canning
My wife and I decided we wanted to do some canning this summer, so our first experiment was with green tomato relish. We went out and bought a pressure cooker and grinder and used a recipe from our friend, Sheldon Cole, from Guthrie Kentucky. We made some great tasting relish, if I do say so myself…good enough that we kept several jars for ourselves and gave away a lot to friends…including Sheldon who gave it his stamp of approval :-). Here are some photos of the process…I can’t give you the recipe since it’s a closely guarded secret, but I have aligned the photos in sequence so you can get an idea of the process.
